For the first time in weeks, I’m excited about our meals for this week! I’m trying a few new recipes. I try to stick with the tried-and-true basics, but trying new recipes just gives me a little more excitement about cooking. And since cooking is something that must be done every. single. day., I might as make it as exciting as possible.
Here’s our plan for the week…
Monday – Chicken Taco Salad
Tuesday – Fried Rice & Egg Rolls
Wednesday – Shepherd’s Pie; Green Beans
Thursday – Buffalo Ranch Chicken Sandwich & Baked Fries
Friday – DFAC Yakisoba (this was requested by my husband)
I usually leave the weekends open for interpretation. We often have leftovers throughout the week or something will come up that causes me to change things around a bit. Leaving the weekends open gives me some wiggle room within my plan.
My weekly goals went really well last week. For the most part I stayed focused on them and accomplished most of what I set out to do, read, learn & be in my weekly goals.
Here’s my goals for this week…
- Wear my Fitbit everyday.
My battery died while we were on vacation and I just remembered to charge it last night. My goal is to get back in the habit of wearing it again. Of course, I do want to meet my step goals, but first I just need to make sure I’m wearing it! - Plan the first 6 weeks of our upcoming homeschool year.
This is what I’ll be working on while three of my four kids are in Vacation Bible School this week. - Develop a chore system for myself and the kids.
- Complete May’s Project Life layouts and move on to June.
- My daily Bible readings.
I really want to focus on reading my Bible on the weekends. I am pretty consistent Monday-Friday, but then I slack on the weekends. - My Discipleship lesson for this week.
I would like to have this read before the end of the week so I don’t have to rush and complete it before my meeting on Saturday. - Continue reading On Gold Mountain by Lisa See.
I am really enjoying this book. I have so many thoughts swirling through my head as I read it. I hope to write more about them when I finish reading this book.
- Memorize 1 John 1:9 and Hebrews 10:24-25 for discipleship class.
- Review past verses.
- Continue following along with Phone Photography Course and actually participate in lessons/challenges!

Being purposeful and proactively kind to others, especially friends that God has placed in my life has been a recurring theme in my reading and something that I want to focus on for this week.
He who withholds kindness from a friend forsakes the fear of the Almighty.
