It’s Monday morning and I’m ready for a new week. Last week was our best week of homeschool yet. I am learning that it requires proper planning and lots of saying “no” to other things in order to be committed to being at home. We did well on or meal planning for the most part last week, too. With only one carry over meal, I’d call it a success! We have a couple coming over for dinner followed by pre-marriage counseling on Tuesday. And then next Sunday, we’re leaving for a Chaplain’s retreat the following week along with a visit with his family at Edelweiss Resort.

Monday – Lasagna Soup
Tuesday – Meatloaf, Mashed Potatoes, Green Beans, Rolls
Wednesday – Crockpot Macaroni and Cheese, Ham, Green Peas and Onions
Thursday – Leftover Buffet
Friday – Grilled Chicken, Yellow Rice, Vegetable
Saturday – Burgers, Onion Rings, Black & White Shakes
The crockpot macaroni and cheese we’re having on Wednesday is my favorite way to make Macaroni. Here’s the recipe for that….
Macaroni and Cheese
3 cups cooked elbow macaroni
1 tbsp butter, melted
3 cups shredded sharp processed cheese
2 cups evaporated milk
1/4 cup finely chopped green pepper
1/4 cup chopped onion
1 tsp salt
1/4 tsp black pepper
Toss macaroni with butter. Add remaining ingredients. Pour into lightly greased Crock pot. Cover and cook on high 2-3 hours, stirring once or twice.
Easy!
