We have a unique situation with this move in that we will be sitting in an empty house for a few days between the time our household belongs are packed up and when it will be loaded on a packing truck headed for Texas. The packers will pack every thing up, take a break for New Years, and then finish up after the holiday.
Because we don’t want to eat out more than we have to during our move, I came up with a plan to have freezer meals prepared for those days when we’re without cookware.
I am planning to double up and then freeze all of the meals that are on our menu this week. I really hope this plan works…it can save a lot for our family during this transition time.
Sunday – Baked Spaghetti (actually this will be just for the kids since my husband and I have an at home date night planned…yay!!…and a batch will be frozen)
Monday – Rice & Bean Burritos; Tortilla Chips; Salsa
Tuesday – Chicken Pot Pie
Wednesday – Cheeseburger Muffins; Baked Fries; Veggies
Thursday – Layered Enchilada Casserole
We’ll be visiting family through the weekend!
