Happy Monday, friends!!!
Cooking around here has become quite interesting. I’m learning to make do with what I have and find appropriate substitutions for what I don’t have. Having a plan has made things a lot less stressful than they would be otherwise.
Our menus have become even simpler than they already were.
I have been so thankful for the ability to feed my family during this time of social distancing.
Here’s a look at our menu for this week with the caveat that there will be changes…
Sunday – Chicken Enchilada Casserole
Monday – Cornbread Sloppy Joe Casserole
Tuesday – Beef Tacos
Wednesday – Crock Pot Salsa Ranch Chicken over Rice
Thursday – Cheesy Taco Spaghetti
Friday – Salsa Chicken with Black Beans and Corn
Saturday – Grill (burgers or steak)
