I stuck to last week’s plan for the most part and was really proud of myself for doing so. There were a few nights when I was tempted to throw out the plan and do take out or fast food, but I didn’t!
The Hawaiian Barbecue Chicken Wraps were a big hit with the kids, even though they were sick and didn’t have the greatest appetites. I’ll definitely serve that again soon when they’re feeling better.
I’m trying several new Weight Watchers recipes this week that I’m really excited about.
Here’s my menu plan for this week…
Sunday – Hawaiian Barbecue Chicken Wraps; Chips
Monday – Chicken and White Bean Enchiladas with Creamy Green Chile Sauce (7 Smart Points); Tortilla Chips; Fruit
Tuesday – Slow Cooker Beef Tips and Gravy on Mashed Potatoes (7 Smart Points); Roasted Veggies
Wednesday – Baked Chicken Parmesan (5 Smart Points) over pasta for the kids; Salad; Garlic Bread
Thursday – Chicken Enchilada Soup (3 Smart Points); topped with tortilla chips
Friday – pizza & movie night
Saturday – Grilled Chicken Nuggets (4 Smart Points); Baked Fries
