I saw this recipe for Banana-Chip Mini Cupcakes in the Taste of Home Cupcake of the Week newsletter that I get and automatically knew that it would be perfect for breakfast this morning. Luckily I hadn’t made our trip to the commissary for groceries yet, so I was able to easily add the ingredients I needed to my shopping list.
I let the girls help me make them when they woke up this morning and they were so excited to do that. I am starting to really enjoy having them in the kitchen with me.
The recipe is actually for mini-cupcakes using mini-muffin pans. But I don’t have mini-muffin pans so I just used regular ones and increased the baking time a bit. For mini-muffins, the recipe gives 42 servings of individual cupcakes, but by making regular sized cupcakes, it only made a perfect dozen. I thought that I would have enough to serve as a snack for a playdate this afternoon, but my little piggies have only left four cupcakes. Actually that is enough for all the kids for our playdate, my friend and I just won’t get any. Which is unfortunate, because they’re really, really good!
Hmmm…why don’t you enjoy this recipe while I rethink our snack plan for this afternoon.
Ingredients:
1 package (14 oz) banana quick bread and muffin mix
3/4 cup water
1/3 cup sour cream
1 egg
1 cup miniature semisweet chocolate chips
1 tbsp. shortening
Directions:
In a large bowl, combine the muffin mis, water, sour cream, and egg; tir just until moistened.
Fold in 1/2 cup chocolate chips.
Fill greased or paper-lined miniature muffin cups two-thirds full. Bake at 375 degrees for 12-15 minutes or until a toothpick inserted comes out clean.
Cool for 5 minutes before removing from pans to wire racks to cool completely.
For frosting, in a small microwave-safe bowl, melt shortening and remaining chocolate chips; stir until smooth. Frost cupcakes.
I think these would good without the frosting as well….but the frosting is what makes a cupcake a cupcake, isn’t it?
