Tonight I made my first “real” meal for Keith since he’s been home.
He requested baked spaghetti…it is one of his favorite dishes. It’s also one of my favorites as well because it is so very easy!!
All it takes is a pound of ground beef, a jar of spaghetti sauce, a pound of spaghetti noodles and cheese. You can use a cup of whatever shredded cheese you like for your own signature taste. Tonight I used a mix of Italian cheeses.
Basically, I start boiling the spaghetti while the ground beef is browning in a skillet. Then I cook spaghetti sauce in with the meat on low heat while the spaghetti noodles finish boiling. After draining the noodles, mix them and the meat and spaghetti sauce together in a large pot. Transfer it all to a casserole dish, top with the shredded cheese and bake on 350 for about 30 minutes (the cheese should be melted on top).
I made this ahead after lunch today and stored it in the fridge while we took the girls and Will bowling this afternoon. When we came home all I had to do was put it in the oven to take, add vegetables and bread and dinner was done.
