Well, happy Monday and happy Labor Day to you all. I don’t know if it’s because I’m a mom or if it’s because of living in Germany, but holidays are just not holidays any more. Today is an American holiday, Labor Day, but, really nothing is different around here. My husband is off work and he has plans to clean our basement today….Labor on Labor Day, right? And me? Well, I’m going to homeschool the girls and work on laundry and cleaning the house. We’re going away for the weekend and I want to have a normal schedule the rest of the week.
Keith was away doing a retreat for single soldiers three days last week, and while he was away, I realized how hard the deployment truly was. Yes, three days was manageable even through we did struggle some. The kids missed their daddy, I missed my husband, and I did not follow our menu plan at all. Hence, several of our meals for this week are carry overs from last.
So…here is our menu for this week.
Monday – Easy and Creamy Italian Skillet Dinner
Tuesday – Shoyu Chicken
Wednesday – Baked Spaghetti, Salad, rolls
Thursday – Leftovers (the plan is to make a buffet of sorts from the week’s leftovers)
Friday-Sunday We are going on a Marriage Retreat that my husband is teaching. So….no meals planned.

I agree wholeheartedly that holidays just aren’t the same when you are a mom. Luckily the whole “making it magical” around the holidays is a pretty nice trade off! Enjoy your yummy week!

I’m trying the Shoyu chicken this week too – let me know if you learn any tips when you make it. I was just going to use chicken breasts because I have them in the freezer
