Happy Monday AND Happy New Year, friends!
A goal of mine for this year is to be more consistent with posting my menu plans. This has to be the easiest blog post I write all week because I’ve already done the prior work. Almost without fail, I menu plan every single week. I don’t know how to do life without a menu plan, so it’s super easy to share it.
I love seeing how other people configure their meal plans and if I can be help you by sharing how I do mine, I’m so happy to do that! Menu planning is the most important thing I do each week to set the week up for success.
Here is my meal plan for this week, the first week of 2023…
Monday – Tater Tot Casserole
Tuesday – Slow Cooker Chicken Tacos & Tortilla Chips
Wednesday – Black Beans and Rice
Thursday – Slow Cooker Texas Chili with all the toppings
Friday – Easy Meatball Subs; Baked Fries
Saturday – Frozen Pizzas
Sunday – Bacon Cheeseburger Chowder
Some things to note…
January is a no-spend month for us, so we’re limiting the amount we go out to eat or order food delivery. Keith and I will still have weekly dates, but other than that, we’re curbing that expense for the month. So, instead of ordering pizza delivery, I’m picking up frozen pizzas from the German grocery store for Saturday night. We actually like the German frozen pizzas better than American ones. I would like to get back to making homemade pizzas more often, but that will probably have to wait until I have a better kitchen to work in.
Through the winter season, we’re going to have a regular Wednesday meal of beans and rice. I often do this at the beginning of the new year. I like that this is a simple, meatless meal that I can count on. We all like it and it’s another way to cut expenses just a bit.
On Tuesday when the family is having chicken tacos, I have a book club meeting. I am bringing Firecracker Shrimp to our book club pot luck.
As always, I highly recommend Plan to Eat for easy and effortless menu planning. I use it to import recipes from websites, record my own recipes, organize recipes, plan menus, put together shopping lists, and I refer to it when I’m cooking.
