The stuffed pepper look really good. Will kids eat those? My kids really like sweet peppers, but trying to figure out if they would eat them like that. Looks really yummy though. How do you make you chicken and rice in the crockpot?

Yes, my kids do eat them. I cut up the pepper and veggies in their plate and they eat them just fine. 🙂
The chicken and rice is really easy. Here’s two different ways of doing it…
2 cans chicken (1 drained)
1 packet italian dressing mix
1 can cream of chicken soup
8oz cream cheese (softened)
your choice of pasta
Mix the italian seasoning with the chicken & juice in a pan and bring to boil. Then add soup & cream cheese, mix well and heat. Serve over noodles or rice.
Or…
4 boneless skinless chicken breast halves
1 envelope dry Italian salad dressing mix
1/4 cup water
8 ounces cream cheese — softened
1 can cream of chicken soup — undiluted
4 ounces can mushroom stems and pieces — drained
Hot cooked rice or pasta
Directions:
Place the chicken breast halves in the crock pot. Combine the Italian dressing mix and water until smooth; pour over top of chicken. Cover; cook on low for 3 hours.
Combine the cream cheese and soup until smooth and blended. Stir in mushroom pieces. Pour soup mixture over chicken. Cook 1 hour more or until chicken is cooked through. Serve over hot cooked rice or pasta

I need to add beef and broccoli with rice to my menu calendar. I love it when we eat Chinese, but I’ve never cooked it myself.
