This morning Keith woke up hungry….very hungry.
He’s leaving to go back in a few days, and I want to do all that I can for him before that time comes. I offered to make pancakes, but he really prefers waffles. The only problem I had was that we were out of mix (or so I thought) and I’ve never made waffles from scratch before.
That is until today!
Not wanting my husband to walk around hungry, I went online in search of a recipe to make waffles from scratch. I hit the jackpot from one of my favorite recipe sites, cooks.com.
I usually make pancakes and waffles using boxed mix (Bisquick, Hungry Jack, etc.). But I’m going to share with you my favorite recipes for basic pancakes and waffles from scratch.
Because sometimes you have an emergency like a hungry husband and no mix on hand.
Waffles
2 eggs, separated
2 c. milk
2 c. unsifted flour
1 tsp. salt
3 1/2 tsp. baking powder
4 tbsp. melted butter
In a small bowl, beat egg yolks until light. Add the milk. In another bowl, sift together the flour, salt and baking powder. Gradually add these dry ingredients to the egg yolks and milk. Add the melted butter. Mix until smooth. Beat the egg whites until stiff and fold in. Blend thoroughly.
Preheat the waffle iron. Pour a ladleful of batter onto the iron, starting in center.
Pancakes
2 c. sifted all-purpose flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
1 egg
1 1/2 c. milk
3 tbsp. oil
Mix all together. Pour 1/4 c. batter in skillet. Brown on both sides until batter is done.
Oh, yeah….I did find an unopened box of pancake and waffle mix in the cabinet this morning, while I was explaining to Keith why I had to make the waffles the “hard” way.

They were wonderful waffles…and for the record, I offered to have Cinnamon Toast Crunch instead of Pancakes–but Monica would not hear of it. Then, she made the most wonderful waffles I have had!

I used that same waffle recipe last week it was a huge hit here at our house. (I had just bought my first waffle iron and we had no mix!) The Husband was very happy with them, though The Girl’s were sprinkled raspberry chocolate chips.

Glad you founda recipe that you all liked so much. My girls absolutely will not eat waffles from a mix. Their daddy makes ’em from scratch, and they are S.P.O.I.L.E.D!! We always make extras and freeze them to have quick breakfasts on school mornings. It works pretty well.

I love making pancakes and waffles from scratch. I don’t had sugar in our recipes since my husband is a diabetic.
We don’t miss the sugar and they taste great.
