Hello, friends and happy Monday!!
I mentioned on Friday that I was in the process of revamping some things here for the new year. Instead of “Menu Plan Monday”, I’m going to start doing a series called “What’s for Dinner” that will be posted at the beginning of each week.
In these posts I’ll share our dinner plans for the week, with links to the original recipes, if possible. I’ll also share photos of our favorite dinners from the previous week.
Without further ado, let’s take a look at this week’s dinner plans…
Sunday – take out
Monday – Stuffed Bell Peppers with Ground Beef
Tuesday – Chicken and Chile Tamales with holiday tortilla chips and corn salsa (thank you Trader Joe’s!)
Wednesday – Hawaiian Shoyu Chicken with Broccoli and Rice
Thursday (Christmas Eve) – Party food…charcuterie board with meats and cheeses, veggie tray, fruit tray and lots of snacks
Friday (Christmas) – Southern Style Pulled Pork Barbecue sandwiches
Saturday – leftovers
This week is a little different with celebrating Christmas. We traditionally have a party on Christmas Eve with lots of holiday snacks. On Christmas we have pulled pork sandwiches. I cook the pulled pork in the crock pot overnight and my son says that he looks forward to waking up to the smell of that pork cooking on Christmas morning.
