We did very well with out menu last week. I have just one leftover carried over into this week. My sister in law is coming to visit this week (for just a day) an I am going to attempt to impress her with a roast. We’ll see!
Monday: Mexican Chicken (leftover) recipe below
Tuesday – Meatballs and Pasta
Wednesday – Roast cooked in crock pot with potatoes and carrots
Thursday – Rhinelander Chicken Night
Friday – Bisquick Chicken Fingers, Fries, Vegetable
Saturday – Breakfast for Dinner (I’ve always wanted to do this with my family…it will be my first, I think)
Sunday – Pizza
The Mexican Casserole we have leftover for tonight is a really easy and delicious recipe. The first time I made it I accidentally bought Hot Rotel and used too much chili powder and the girls couldn’t eat it. It was all Keith and I could do to eat it ourselves!! It turned out much better this time, using the regular rotel and the right amount of chili powder.
Mexican Chicken
4 large chicken breasts (fillets) (I used boneless and skinless)
2 cans Cream of Chicken soup
1 can Rotel (chopped) tomatoes
1 C. chopped bell peppers
1 C. chopped onion
1/2 T. garlic powder
1/2 T. chili powder
1 C. grated sharp cheddar cheese
1 large bag regular flavor Doritos
Boil chicken. Cut into small pieces. Mix together soup, Rotel, bell peppers, onion, garlic, chili powder, and 1/2 cup of crushed Doritos. Place chicken pieces on top. Pour in mixed ingredients. Bake at 350* for 30 minutes. Pour remaining Doritos and cheese over top and return to oven until cheese melts.

You and Stephanie are such a good influence on me! I’ve actually been planning a weekly menu which makes grocery shopping easier and cheaper on gas! I can’t wait until I get an oven because I want to try this recipe!
