Last week’s Beefy Spanish Rice was a huge hit around here. It was a favorite of mine and Will loved it, too. Yesterday we had leftovers and Will had two big bowls full! It’s definitely a keeper.
This week’s meals are pretty basic. I am making a recipe for Chicken Roll-ups that I’ve only made once before. A friend sent me the recipe when the girls were about Will’s age and I remember they ate it really well, but then I lost the recipe and haven’t made it again. Last week, my mother in law mentioned sending me a recipe she thought we would like ant it was the same one! I’m so excited to make it again. It’s very easy and a good one-nighter for us.
Monday – 15 Minute Chicken and Rice Dinner
Tuesday/Wednesday – Meatloaf, Mashed Potatoes, and Vegetables
Thursday – Rhinelander
Friday – Chicken Roll-ups
Chicken Crescent Roll-ups Recipe:
2 small or 1 large can cooked chunk chicken
1 cup grated cheese
1 can crescent rolls
1 can cream of chicken soup

Drain chicken, saving broth. Â Combine chicken and 4 tablespoons cheese. Â Separate rolls into triangles. Â Place 2 tablespoons of chicken mixture on wide end of roll. Â Roll up and seal edges. Â Place in lightly greased 9 x 13 inch casserole dish. Â Pour milk into reserved broth to make 1 full cup. Â Mix soup, milk/broth mixture and 8 tablespoons cheese and pour over rolls. Â Bake at 350 for 20 to 25 minutes (until lightly golden). Â Sprinkle with remaining 2 tablespoons of cheese and bake 5 to 10 more minutes.
