On Friday as I sat down at my desk, notebook and pen in my hand, to plan our menu for the upcoming week, my husband walked in the room. He needed my help installing WordPress on a new blog he’ll be launching in February.
I had no idea where to begin, but he had a set of instructions printed out that I could {hopefully} work my way through.
Since I was being tasked with setting up his blog, I handed him my notebook and pen and suggested that we trade jobs.
Yes, I tasked him with the weekly menu planning.
And that is the best explanation I have as to why “Beanie Weanies” found their way onto our menu for this week.
Sunday – Baked ham, black-eyed peas, and rice
Monday – New Year’s dinner leftovers
Tuesday – Crock Pot beef stew
Wednesday – Beanie Weanie’s w/bacon
Thursday – Date night (hopefully)
Friday – Chicken and Cheese Quesadillas with mexican rice and tortilla chips

Saturday – Cheeseburger Salad (I saw this on Pioneer Woman just this morning and I HAVE to try it!)
One of my goals for the new year was to prepare better breakfasts. I want to get away from having cereal nearly every morning.
Along with our dinner menu, I’m going to share some of my breakfast plans for the week. I’m not ambitious enough to plan them out by the day at this point, but I do have an idea of what some of our options will be.
Breakfast:
Ham biscuits (using leftover baked ham from New Years)
Blueberry and Wild berry muffins
Homemade doughnuts (I got doughnut pans for Christmas and can’t wait to use them!!)
Pancakes
Toast and scrambled eggs
Bacon, egg & cheese muffin cups
Apple cinnamon oatmeal
