As you’ll see my menu there’s lots of easy, sandwich-y, eat with your hands kind of food in store for us this week. There’s two reasons for that.
One, it’s the week of the 4th…a holiday week…and since we’re not really taking a vacation, we’ll celebrate by way of food.
And, two, I’m going out of town and leaving my husband with easy dinner options.
I am also including a dessert in this week’s menu. I love baking and making desserts. It’s my favorite kind of cooking, but since starting out on a weight-loss journey a year ago, we haven’t seen many desserts around here. I miss that. I think tasty treats are perfectly okay in moderation, so I’m allowing a weekly dessert to make an appearance.
Monday – Grilled burgers; baked beans; corn and salad.
Tuesday – BBQ pulled pork; vinegar slaw; baked fries
Wednesday – Hot Dogs topped with slaw; tater tots
Thursday – leftovers or burritos from the freezer
Saturday – Linguini w/white clam sauce; salad; garlic bread
Dessert: Red, White & Blueberry Trifle

I’m all about low cal deserts and have a couple of recipes on my blog (http://coleybelle.blogspot.com/search/label/Recipes). The lemon pie is delicious and the Dreamsicle Pudding is a kid favorite.
