Our Bible lesson yesterday called for the use of two cookies…one large and one small.
We’ve been studying the story of Abram and Lot and how Abraham unselfishly gave Lot the first choice of land.
In an application lesson on being unselfish, the plan was to ask my girls which of the two cookies (large and small) they would choose.
Well, I couldn’t use just any cookie for this lesson.
I wanted to make a special cookie for my girls, but as I began making plans I discovered that I was out of butter and I knew better than to use a stick of margarine in cookies. I learned that lesson in my first year of marriage.
“Oh, well…” I thought, I would just have to substitute an Oreo and break the second one in half.
Lame!
We had a terrible morning of homeschool.
Everyone was cranky.
As I was looking around the fridge to come up with a plan for lunch I discovered one lone stick of butter…YES!!!
It was just what we needed to turn the day around!
So as the children ate their lunch, I busily made up a batch of peanut butter oatmeal cookies and even decided to add in some chocolate chips that were calling me from the pantry.
The cookies were delicious!
Our Bible lesson was taught.
Smiles returned to the faces of all of my little ones.
I even had a plate of cookies sitting on the counter for my husband to have when he came home from work.
Peanut Butter Oatmeal Chocolate Chip Cookies |
- 3/4 c. flour (all-purpose)
- 1/4 t. salt
- 1/2 t. baking soda
- 1/2 t. baking powder
- 1/2 t. cinnamon
- 1/2 c. unsalted butter (one stick) at room temp.
- 1/2 c. sugar
- 3/4 c. brown sugar
- 1 egg (large)
- 1/2 c. creamy peanut butter
- 1 t. vanilla
- 2 c. old fashioned oats
- 1 c. chocolate chips
- Preheat oven to 375 and line baking sheets with parchment paper.
- Whisk flour, salt, baking soda, baking powder and cinnamon together in a small bowl and set aside.
- Beat the butter, sugar, and brown sugar together with a mixer on medium speed until creamy.
- Add the peanut butter and mix until creamy.
- Add the egg and vanilla. Mix until it’s all well combined.
- Scoop the cookies into round balls using an ice cream scoop. Place them on the baking sheets, with about 2 inches between each cookie.
- Bake for 10-12 minutes.
- Remove cookies from oven and cool on the baking sheet for a few minutes before transferring to wire racks.
- Cool completely on the wire racks.
I used chocolate chips in these, but you can easily substitute whatever candy you have in your pantry (m&ms, peanut butter cups, etc.) or no candy at all.
I made the third dozen of these cookies smaller than the others for our Bible lesson. To do that, I made round balls by scooping them with a teaspoon. Also, these smaller cookies only baked for about 8-9 minutes.

Do you happen to know if this cookie dough freezes well? It looks like a perfect type of cookie for our peanut-butter-loving family, and I would like to try it. If it is well received, I’d like to be able to make a double/triple batch and roll some into logs for freezer supply.

I’m not very good at freezing things, but I don’t see why this wouldn’t work for freezing extra batches. If you try it and it works, let me know!!
