Happy hello to a new week and getting back on track with posting my menu plans!
The last several months have been consumed with Yoga Teacher Training and now that I’ve completed my 200 hr training, I am getting back to some regular posting here. I’m looking forward to sharing more consistently.
Here’s our menu plan for this week…
Monday – Slow Cooker Tamale Pie
Tuesday – YOYO
I’m borrowing a new term for “you’re on your own dinner nights”–YOYO–I heard this in a conversation today and I love it!! Tuesday has been a YOYO night for us lately because the kids are busy with Club Beyond, on-post youth activities.
Wednesday – Crock Pot Cheesy Chicken Spaghetti; Salad; Garlic Bread
Thursday – Taco Casserole
Friday – Tomato Basil Soup w/Grilled Cheese Strips (from Magnolia Home cookbook)
Saturday – Korean Beef & Rice
Sunday – Chicken Burrito Bowls
I didn’t plan a take-out night, so this plan is definitely subject to last minute changes.
Most of the recipes I’m using this week are tried and true favorites. I’m trying to use my cookbooks more and I have a plan to include one cookbook recipe each week. So many of my meals come from recipes online and my good cookbooks are just sitting on the shelf neglected. I’ll leave the name of the cookbook when using one on my menu plan.
