The most exciting meal I had last week was the Strawberry Cheesecake French Toast. My friend, Carol, ended up coming over to join us for dinner that night. She kept my kids while I went to an FRG meeting. She also came over on Sunday and brought a delicious chicken casserole.
Here’s the recipe for the Strawberry Cheesecake French Toast. If you try it, I would love to hear how you and your family like it.
3-ox. pkg. cream cheese, softened         2 eggs
2 T. powdered sugar                           1/2 c. half-and-half
2 T. strawberry preserves                   2 T. sugar
8 slices country white bread                  4 T. butter, divided
Combine cream cheese and powdered sugar in a small bowl; mix well. Stir in preserves. Spread cream cheese mixture equally over 4 slices of bread; top with remaining slices to form sandwiches. Whisk eggs, half-and-half and sugar together in a medium bowl; set aside. Melt 2 tablespoons butter in a large skillet over medium heat. Dip each sandwich into egg mixture, completely covering both sides. Cook 2 sandwiches at a time for one to 2 minutes per side, or until golden. Melt remaining butter and cook remaining sandwiches as instructed above. Slice diagonally and serve. Serves 4.
I served these topped with powdered sugar, fresh sliced strawberries, and whipped cream and with a side of bacon. I thought I took pictures, but they weren’t on my camera…I’m blaming that one on mommy brain!
