We are in the middle of our 862 PCS (just kidding…it hasn’t been quite that many) and I’m finally getting some systems in place to make this difficult time a little easier.
Over the last several weeks I’ve doubled several recipes that I made for dinner and froze one portion of that to go into the freezer. I ended up with four freezer meals that we’ve been able to enjoy during the last several days when our kitchen has been packed up.
Without these freezer meals, I would have been stressed out about what to serve my family for dinner over the last week and we would have eaten out much more than I would have liked, spending more money than we have budgeted.
Any casserole type of dish can be easily doubled and frozen.
They can then be heated up in the oven for a quick and easy dinner, whether you’re moving or just in a busy season of life.
Today I would like to share with you the four meals I froze for this current move.
Baked spaghetti is a super simple recipe that my kids and my husband LOVE!! Add a salad and you’re good to go!
We love Mexican dishes in my home and this one did not disappoint.
My daughter’s two favorite foods are broccoli and chicken, so she was very happy with this! This recipe made a ton and it was very healthy.
Tater Tot Casserole is another regular favorite in my home that is super easy to double and freeze!
Having these four meals in the freezer during our move has been so helpful and it has relieved unnecessary stress from my life.
For reheating them, I simply preheated the oven to 350 degrees and put them in for 30-45 minutes. Oh, I also took them out of the freezer and into the refrigerator on morning that I was planning to serve them.
Do you make a lot of freezer meals?
I don’t on a normal basis, but I’m thinking I’ll try to do more of this when we get settled in Kansas. I love anything that makes life a little simpler!
