Last week’s meals were delicious! The Sausage, Potatoes and Peppers didn’t work out, but I really want to try it again. It just wasn’t meant for me to have it that night. I first realized that I forgot to buy one of the ingredients, so I decided to just improvise and then I realized that my potatoes were bad. The produce here doesn’t last long…very disappointing! I did use the sausage, though. I cooked it in spaghetti sauce and served it with ziti pasta. It was really good. The girls loved it!! So…I bought new potatoes last week and hopefully, we can enjoy the original meal.
I invited a friend over for the Chicken Enchiladas and they were excellent. Even the kids enjoyed it! This week I am going pretty basic and simple.
Monday – Country Fried Steak, rice, and Gravy
Tuesday/Wednesday- Sausage, Peppers, and Potatoes (recipe from Barb’s Kitchen)
Thursday – Tuna Casserole
Friday – Food Court Friday (this has become such a fun time with our FRG)
Saturday/Sunday – Baked Spaghetti (we didn’t have this last week)
